Danbo is a matured, semi-soft, aged Danish cheese made from cow’s milk. A smear-ripened and washed-rind cheese, it is one of Denmark’s most popular cheeses. The color of the cheese is ivory-coloured to light yellow with a soft and slightly springy texture. The elasticity and firmness of the cheese allow for easy cutting. It has small, round eyes about 10 mm in the diameter that may be less prominent in variants where flavorings are used.

The smell of Danbo is mild, slightly acidic, and aromatic due to smear ripening. As the cheese ages, the smell and taste become better defined. The unique taste and texture are achieved after maturing it for 3-4 weeks.

Is a very hard and granular cow’s milk cheese, typically used for cooking or grating over pasta dishes. It’s salty with a “rich and undeniably copious flavor” and becomes creamy when heated. Unlike Parmigiano Reggiano, the salt does not crystallize, thus producing a grainy texture when broken. But just like it’s parent-cheese, it’s perfect for grating over pasta.
